Insider News from The Chefs Molecular Kitchen


Secrets from the Molecular Kitchen Molecular gastronomy is the scientific approach of nutrition from the perspective of physics and chemistry. The physical properties: force, vector, and mass; and chemical components: molecular structure, formulae, and reactant products of an ingredient are addressed and utilized in the preparation and appreciation of the ingested products. It is the constituent of food science that approaches the preparation and enjoyment of nutrition from the perspective of a scientist at the scale of atoms, molecules, and chemicals.

This month we're profiling Scott Guerin -Research and development Chef of the Modernist Pantry.


Chef Bio

A Chef of 17 years, after attending the Atlantic Culinary Academy he worked for numerous Chefs around New England. Eventually he landed a job as a Chef instructor at Le Cordon Bleu College of Culinary Arts Boston where he earned his American Culinary Federation Title of Certified Executive Chef. Most recently he has been the Research and development Chef at Modernist Pantry in Eliot, ME.
